Ingredients:

  • Sift:
  • 1.25 cups cake flour
  • .5 tsp. salt
  • 1 tsp. baking soda
  • Cream:
  • 1 cup sugar
  • 1/2 cup butter or margarine
  • Add to Butter/Sugar Combo:
  • 3 mashed, very ripe bananas
  • 2 beaten Country Hen eggs
  • 1 tsp. vanilla


Directions:

Blend wet and dry ingredients. Don't overmix! At this point you may add, if you wish: 3/4 cup of nuts (walnuts or pecans) or 1.5 tbsp. of poppy seeds.
Bake in a buttered and floured or Pam-sprayed tin at 350 degrees for 45-50 minutes. or 12 cupcakes (bake 20 minutes).
