Caesar Salad Recipe

Ingredients:

  • Romaine lettuce leaves & hearts carefully washed by hand
  • 1 Country Hen Egg
  • 1 Tbs. of juice of one lemon
  • Croutons
  • Basic Caesar Salad Dressing (one clove of garlic cut into small pieces, one small jar of pure Italica olive oil or any virgen olive oil. Keep in covered jar for about a month, do not refrigrate)
  • Black pepper, preferably fresh ground
  • Small pieces of anchovies for taste, if desired


Directions:

Romaine lettuce leaves and hearts carefully washed by hand,
Add one Country hen raw egg and toss,
Add about a tablespoon of juice of one lemon and toss (coats the eggs)
Add croutons, home made or Caesar salad croutons in packages.
Add basic Caesar salad dressing and toss.
Add black pepper, preferably a freshly ground pepper.
Add small pieces of canned anchovies for taste if desired
Sprinkle several tbs. of grated parmesan cheese over the salad.
Chill in Refrigerator for about 20 minutes.
Serve (serves about 2 people, or four people if small servings)
